I’m the type of person that can never say no to a good bowl of cereal in the morning. But in an effort to eat “more raw” and be more healthy, I’m looking for good alternatives.
I knew about “chia pudding” or “chia yogurt” before, but had never given it a try (for some odd reason). I have to admit, I usually have cinnamon and blueberries or bananas in my oatmeal – another favorite of mine – and with those same flavors, it reminded me a bit of oatmeal, in a weird way. Anyway, this has an added bonus because you have to make it the night before, so it’s ready for you in the morning minus the few toppings! Perfect for those crazy mornings or on the go!
- 4-5 Tablespoons of Chia seeds
- 1/2 to 1 cup almond milk
- 1/2 teaspoon cinnamon
- 1 teaspoon agave
- 1 cup blueberries (or other fruit of choice)
- 1/2 cup walnuts (or other nut of choice)
- a few slices of banana
Mix the chia seeds, cinnamon, agave and almond milk together. Stir in blueberries and leave mixture in refrigerator over night. It should become a thick texture by morning. Layer the chia mixture with nuts and top off with some fresh berries and banana.
