Chicken salad is sort of like a comfort food for me.

I don’t know what it is, I absolutely love chicken salad. It may seem like a simple dish to appreciate, but there is something about the texture with the crunchy nuts and the sweetness of the grapes, it just gets me!

Am I the only one?!

And what I love is that after making chicken salad, the leftovers seem to get better and better. How is that possible? Maybe it’s my imagination. Maybe it’s not.

Anywho, chicken salad is a great option to make if you’ve bought or roasted a whole chicken. You may get bored with straight chicken leftovers so why not mix it up?

I particularly enjoy chicken Waldorf salad because of the sweetness the apple adds. I also mixed in Greek yogurt in order to reduce the amount of mayonnaise.

You can serve it over lettuce like spinach or over toast or on a pita bread! Seriously, the options are endless, folks.

Chicken Waldorf Salad recipe
Instructions
  1. Chop the chicken up and add to a large bowl.
  2. Add in the mayonnaise, yogurt, lemon juice, salt, apple, grapes, celery and walnuts.
  3. Toss everything together to coat it evenly. Store in the fridge in an air-tight container for up to a week.
