I told Richard the other day that we should try and make at least one curry per week. First of all, because I love curry. But second of all, curries also make really good leftovers!

Since I have been back at work we have been doing our best to cook or prep all of our meals on Sunday. That way, we can focus on our baby in the evenings. Then after he goes to bed, we have our “adult time.” It is so much easier having a meal without worrying about Connor! He is usually fussier in the evening because he is just ready for bed. So we put him in bed around 7 pm now and he is doing just fine!

It is SUCH a blessing to have him developing good sleep habits early on. It is definitely making my life feel more normal again. Of course, it will never be the same, and I don’t want it to be, but it is helpful to have some me time in the evening.

Instructions
  1. Heat oil in a large skillet over medium heat.
  2. Add onion and sauté for 4-5 minutes, until softened. Add garlic and sauté another 30 seconds.
  3. Stir in curry powder, diced tomatoes, Greek yogurt and milk. Season with salt, pepper and cayenne, if using.
  4. Bring to a simmer and cook for 2-3 minutes, until slightly thickened.
  5. Stir in chicken until warmed through, 1-2 minutes.
  6. Serve hot with fresh chopped cilantro if desired.
